Egg Poaching - the easiest cooking ever


Kitchens are the best place where one can try unkown recipes and adding a bit of imagination. But when it comes to eggs, we generally use set pattern solutions: frying an egg or going for an omelet - though recipes can vary.

But a few try poaching an egg - we know there is something called an egg-poacher, but how many of us have really tried to poach an egg?



Well believe it or not, egg poaching is the easiest of all egg-making techniques and recipes. And the best thing is you do not get oil flying on your clothes if not varying an apron. All you need is water, a bit of vinegar and eggs.

How delicious Turkish meat delicacy is made


No dish or eating is complete unless there is a dish of meat or beef. Almost all people around the globe, except the Indians and some veggies, like at least one dish of meat of any kind. And there are countless recipes to cook, barbecue or fry the meat to suit one's taste bud, mood, taste and environment.

Like all people, Turks are too good in making meat dishes. Recently I was in Germany to visit my son where a lot of Turks live and I had a good time eating their delicious and mouth watering dishes. Some of the best dishes that I ate included Köfte or the meat balls, ÅžiÅŸ Kebap - made of chicken or lamb meat skewered on wooden or steel skewers and eaten with dipping these in yogurt.



Doner Kebap was my favourites. The chicken or beef is wrapped in a cone shaped hanging with close to a vertical burner. The meat is roasted by rotating the cone and then cut into very thin slices by a huge sword-like knife or an electrical shredder and then served in a pitta bread or served with lot of salad and pickles.

But for those going in for a more delicious dish, the procedure is rather long but the outcome is tremendous. See the video below and you would know how this special meat dish is made and served - see how the foodies enjoy eating this.

Angeethi BBQ






BBQ is something that is liked by a majority of life loving people around the world. It is an essential ingredient of family reunions and get-togethers besides solitary events like the one we had a  couple of nights before with my wife and son.

Although I usually use the BBQ apparatus, but since we moved into our new house, many things are still packed and stored on the roof hut of our house. As the 'audience' was to small, I decided to use the tradition coal-powered brazier, called 'Angeethi' in the Pakistan-India subcontinent.



As always, I am the main man behind the show to light up the coal, bring these to optimum burning level and then fry the meat-laded skewers.

Soon the coal were red hot and ready for the about a dozen skewers to turn those into freshing cooked aromatic tikkas.



There is no parallel to the aroma of burning coal with meat juices that fell on them adding a unique combination which one cannot smell when going out. Although I was all by myself enjoying the aroma, with my wife occasionally coming out to see how 'things' were being done and seeing what was being done with her 'Khaddi' bag!!



While the coal were being readied or even when the tikkas were put over the coal to be cooked, I was also busy taking photos with my Galaxy S4, including some gif format shots too, which can be seen in this post. So the homemade chef's photography skills were equally being tested mainly for the purpose of this post.



After the entire lot of skewers was done, came the next step - frying a part of the trove into the frying pan with tomatoes, onions and green chilli.


In the gif below, you may be able to see the oil and juice of tikkas bubbling making up the dish into a heavenly food.



 

And wow - the dish was finally ready and we all devoured it till there was nothing left in it. 



Oh, before I forget, a few words of Khaadi bag I mentioned earlier. Well in the absence of a 'Pankhi or Pakkhi' or the hand held fan to boost up the burning of the coal, I used one of the Khaadi bags as improved Pakkhi - while my wife really felt sorry for the fate of a good bag which could have been used for some other purpose. Khaadi is a famous brand of unstitched / stitched cloth for women besides many other decoration fabrics. 

Well that was all about the Angeethi BBQ - do you do BBQ at your place too? If not try someday - there is no parallel to homemade tikkas. At least one is sure of the source and the animal!!

Smart Skewering


Eating out in the wilderness or even in one's small garden at night on raw fire and meat or beef skewered giving out its aroma has its own charm.

But skewering the beef or meat takes time for whosoever is tasked to do it and sometimes one gets one's fingers wounded in the process of skewering. Well not any more.

I just saw this innovative way of skewering without any chance of getting one's fingers wounded and doing it the smart way. And the result is simply outstanding: At the end of the process, one gets perfectly cut square pieces of meat or beef evenly skewered and in equal numbers.

Egg Yoke separating made easier without a mess [video]

We often seen women and chefs dirtying their hands for separating the egg yokes from whites while baking or making dishes where such separation is required.

But not anymore: we now have a simple 'device' that can suck the egg yoke without making any mess in the kitchen.


After the egg has been cracked into a bowl the gadget, which works like a pipette, sucks up the yolk into a wide-mouthed plastic nozzle when the rubber top is squeezed.



It then holds the yolk safely until the cook is ready to use it, when with another squeeze of the top it plops it back out in one piece.

This amazing and simple device has been invented by Hamish Dobbie, 30, a mechanical engineer, from Auckland, New Zealand.

Winter Fish: The best thing to steam


The winter is here finally in its full 'bloom.' last night it rained and I could listen to rain drops falling on the my bedroom window glass. I wanted to get up and see the Nature's gift when everyone was sound asleep, but leaving a cozy warm bed was a very difficult decision to make, so I opted to listen to the sound made by raindrops.

When I got up in the morning, I went out and everything was wet and my lawn and flowers looked fresh and health. And it was then it dawned on me that I was standing in almost a few degrees Celsius wit no warm clothes on and ran back and lit the heater to warm myself.


In winters, one must keep oneself warm lest many 'traditional' winter ailments come attacking. And one of the best antidote against winters cold is eating fish - and lot of fish before the winters pass away, unfortunately these do so very quickly.

Those living in Lahore are lucky as there are lot of places in Lahore where one can buy quality fish. Sardar and Inrahim are to names of Lahore that make best fish, served sizzling hot if you want to eat right at the shop. And sitting outside in the cold, eating steaming hot fish has no parallel. I you haven't tried this, do it this winter - it will be a lifetime memory.

Why eat fish? Well food experts and doctors say rthat fish is high in protein, vitamins, minerals, and omega 3 fatty acids, which are found lacking in most diets, and can reduce some problems associated with PMS, memory loss, cardiovascular functions, colon cancer, and stroke. The tissues of oily fish provide fish oil which contains the omega-3 fatty acids, eicosapentaenoic acid (EPA), and docosahexaenoic acid (DHA), precursors to eicosanoids (believe me it is hard to pronounce such medical terms – so I write exactly as I found out) that reduce inflammation throughout the body and are therefore recommended by experts for a healthy diet.

Now while eating fish is beneficial for health, the kind of fish we eat at Sardars and Ibrahims or anywhere else which is heavily deep fried in vegetable oil is certainly not the kind of fish we should be eating. and I have seen people eating the deep fried fish in kilos, am not joking. These fish friendly people, specially in Lahore, sit outside in the December nights and the 'in flow' of fish continues in consignments of kilo in succession.

We need to eat fish, preferably steamed with least oil applied. While I was in Iran, my land lady would often make the steamed fish and I tell you that nothing tastes like a steamed fish. So when eating fish, try to eat steamed fish, but certainly not in kilos. However, one should eat it often 2-3 times a week in winters.

One should also be mindful of type of sea fish as some of these contain higher amounts of mercury like Tilefish, swordfish, king mackerel and shark and should not be consumed at all. However, Shrimp, salmon, pollocks, canned light tuna, shrimp and catfish contain lower levels of mercury, but should not be eaten more than 12 ounces in a week.

So lets be healthy by eating fish this winter steamed not deep fried!!

Coffee that would keep you active and alert the whole day

Office and business work is always tiring, awful and even sometimes boring. What do do you do then? Keep yawning or ask for a cup of steaming hot aromatic coffee or take a time out and go out in the open to shrug off your boredom or tiredness?

Well When I work and there are files piling up, I always ask for coffee - not ordinary coffee but a special coffee that my wife makes me for when I come home with that awful expression on my face. She knows that I needed to be shaken up and open up eyes as wide as possible for a refreshing and delicious dinner she has made for me and the family.


So should I let out the secret for those who want to be alert, active and energetic the whole day and come home as if they have been on a picnic? OK for the love of those who love coffee - a good refreshing cup of coffee, here is how this special coffee is made: 

Ingredients:
Coffee - 3 teaspoons
Water  - 3 cups
Brown sugar (to taste and level of sweetness required)
3-4 pieces of clove
1 small stick of cinnamon
Cream
Icing Sugar

Preparation
This is the easiest drink I can make myself as I learnt it - so here is how it is made:
  • Add coffee into the water in open mouthed pan and bring it to a boil
  • Add brown sugar, cloves and cinnamon and let the coffee bring out its true brown colour.
  • Stain and pour into cups (it will make three cups)
  • Add cream to taste
  • Sprinkle icing sugar over it (for decoration sake perhaps)
  • And then call me to drink it.
You see, it is as simple as that but it is full of vitality, energy and life that no kind of those varying colours of bull drinks can offer.

Many people like something sweet to eat after the dinner. The sweet dishes different from place to place, from ice cream in summers to many forms of cakes, puddings and chocolates. But ever tried something eastern?

The easters desserts are not only different, these have a very distinctive and aromatic taste. Most of the eastern desserts are made of milk, sugar and many add ons. 'Kheer' is one of the most easily made desserts, with main ingredients like milk, sugar and rice. Normally it is taken cold with almonds either sprinkled over it or even added during the process of cooking.

Well well well ! It has been quite a while that I posted something about recipes and eatables. There have been many things going on elsewhere that I could not think of eating myself.

Today, still engrossed in elections in Russia, Golfing in Florida, and cricket in Australia, I came across something that stopped me right there and hen - something that I love to devour to the last visible thing in my pizza serving and I immediately thought of sharing the link with my readers.

.... I have ten days left until my due date. I am feeling great and really have no complaints. Ok, maybe a little back pain and a few too many trips to the bathroom, but really nothing major. The nursery is ready and my bag is packed, so we are just waiting for our little guy. I recently made a few meals to put in the freezer for when the baby comes. I am sure we will both be exhausted and not in the mood to cook once our little pea is here. One of my favorite freezer meals that I’ve made are these Stacked Roasted Vegetable Enchiladas.

Beef and Vegetable Stir Fry Recipes

Main Courses | Serves 4 

Beef and Vegetable Stir Fry Recipes
• 250g dried medium egg noodles
• Vegitable oil
• 350g steak, thinly sliced
• 2 garlic cloves, peeled and finely sliced
• a thumb-sized piece of fresh ginger, peeled and finely sliced
• 1–2 large fresh red chillies, finely sliced
• 200g peanut shoots or beansprouts
• soy sauce
• sesame oil
• juice of ½ a lime
• 1 large red pepper, deseeded and finely sliced
• a handful of mangetout, finely sliced
• a handful of baby corn, quartered lengthwise
• 6 spring onions, trimmed and finely sliced
• a bunch of fresh coriander, leaves picked and roughly chopped
• cos lettuce leaves, to serve

Beef and Vegetable Stir Fry Recipes
Cook the egg noodles in boiling salted water until just tender.
Drain, place in a bowl and set aside.
Heat a large wok or a heavy-based frying pan until very hot.
Add a splash of vegetable oil then stir fry the beef slices with the sliced
garlic, ginger and chillies until just cooked. Add the shoots or beansprouts,
a good splash of soy sauce and sesame oil and the lime juice
for the last 30  seconds of cooking.

Tip the contents of the wok into a large bowl, including all the lovely juices.
Put the wok back on the heat, add a splash more vegetable oil and all the vegetables.
Stir fry for 1 to 2 minutes, then add the cooked noodles and toss well over the heat.

Divide the fried vegetables and noodles between 4 plates.
Return the beef and juices to the wok and stir fry until heated through.
Add the coriander and toss until well mixed with the beef.
Arrange on top of the noodles and garnish with a cos lettuce leaf.

Tasty Chicken Steaks Recipe

Chicken Steak (Recipe) 

Tasty Chicken Steaks Recipe

Ingredients:
: 3 tablespoons Worcestershire sauce
1 tablespoon mustard paste
1 tablespoon lemon juice
...1 tablespoon vinegar
1/2 teaspoon crushed black pepper
1/2 teaspoon crushed white pepper
1/4 cup oil (preferably olive oil)
1 teaspoon garlic paste


Method
With the help of a flesh hammer,
pound 3-4 chicken breast fillets
(or 500 gms. undercut beef steaks).
In a bowl add all the above ingredients and mix well
with a whisker till oil is fully blended.
add 1 teaspoon salt in it. mix well and marinate the chicken breasts
(or beef steaks).
marinate for 2-3 hours.
Grill or fry in very little oil in non-stick frying pan.
Don't fry too much otherwise the moisture will not be retained. 


white sauce: 
saute 2 cloves chopped garlic in a little oil in frying pan.
add 2 tablespoons white flour and brown it partially.
add 1 and half cups of milk and remove frying pan from flame.
whisk thoroughly. put the frying pan on flame again and add pinch of oregano,
pinch of black and white pepper each and 1/2 teaspoon salt.
Cook toll the sauce thickens. add 2 tablespoons cream and lower flame.
whisk.
simmer for a minute or so. pour on steaks for serving. 


Garlic Bread 
for garlic bread just grind a few cloves of garlic.
soften 1-2 teaspoons butter at room temp.
add the garlic paste, a little salt and pinch of oregano.
spread on pieces of french bread cut in circles.
bake in oven at high temp. for about 10-15 mins.
or till it turns brown. u can also add
shredded mozzarella cheese on top.
